A Guide To Pairing Wine & Cheese

THE SCIENCE

Science tells us that pairing foods and beverages that taste similar to one another improves the experience and that the similarities compliment one another, but the opposite can also be true! The fat in cheese and the acidity in wine compliment each other because of that very fact- they are opposites! The different compounds of cheese and wine creates a balanced and pleasing "mouthfeel," which refers to the way foods feel in the mouth. No wonder cheese and wine pair so perfectly!

Scientific Research Tells Us:

  • Polyphenols, (plant compounds) found in wine, can have a significant effect on the gut microbiome which can in turn reduce cardiovascular disease risk
  • Just 1 glass of red wine can increase healthy bacteria in your digestive system, similar in the way kombucha or yogurt can.
  • The polyphenol content in wine can have a positive effect on your immune system! As good bacteria grows in your gut, your immune health will also strengthen.

Here's Why Wine & Cheese Taste So Good Together

Ever wonder why wine and cheese taste so good together? Why they are the perfect match made in heaven? Why they make each other taste better? Well, there is actually a science (and history) behind it! Records dating back hundreds of years show us that wine and cheese have been served together for generations. It is believed among wine historians that the concept of pairing wine and cheese originated in the early winemaking days of France.

THE SCIENCE

Science tells us that pairing foods and beverages that taste similar to one another improves the experience and that the similarities compliment one another, but the opposite can also be true! The fat in cheese and the acidity in wine compliment each other because of that very fact- they are opposites! If you consume fatty or oily foods/beverages, it makes your mouth feel slick, or even slimy. If you consume astringent foods/beverages like green tea and dry wines, it makes your mouth feel rough and dry. But if you consume these different compounds together, it creates a balanced and pleasing. "mouthfeel," which refers to the way foods feel in the mouth. No wonder cheese and wine pair so perfectly!

First, The Cheese.

How The Shape of the Glass Influences the Taste of Wine

It is True. The Taste of Wine Can Change in Different Glasses.

According to Riedel Crystal, the 260-year-old Austrian fine glassware company, a glass should be a "wine tool" designed to unlock a wine's full flavour potential, not just something to pour the wine into.

The Science Behind This Phenomenon

The architecture of a wine glass consists of three components: The bowl. the stem and the base, all of which work together to deliver the "message" of your wine. The bowl of the glass is the key element that influences the flavor of your wine. Bowls of wine glasses can have different shapes, sizes and rim diameters; this is what can change the tasting elements of the wine, and this is how:

  • The diameter of the rim determines how much air can reach your wine, and how effectively your wine can "breathe."
  • Different sizes of glasses determines how much available space there is for your face to fit into when you tilt the glass to drink the wine. Your nose, in particular, is very important in the involvement of activating our senses.
  • The shape and size of the glass influences the direction that the wine hits your tongue and mouth, and which taste buds the wine hits first. Different tastebuds on your tongue taste different things!

A WINE GLASS GUIDE JUST FOR YOU

RED WINE

Drinking red wine from a glass with a medium sized bowl is best, because this allows the wine to breathe as the exposure to oxygen allows bolder notes to come through. The wide rim also allows your nose to fit inside the glass, which is ideal for maximum immersion of the wine!

Bottle of

2019 Reserve Pinot Noir

  $35.00

OAKED WHITES

White wines, particularly Oaked Chardonnay, is best served in a glass with a large bowl and wide rim. The size of the large bowl allows the wine to develop and avoid becoming too concentrated. The wide mouth also steers the wine to the edges of the tongue, where sour and bitter notes are tasted. This helps the toasty aroma and acidity of the wine be well balanced!

2018 Vintner's Reserve Chardonnay

  $27.00

BUBBLY/ SPARKLING

Contrary to popular belief, bubbly, sparkling wine and Champaign are best served in a glass with a medium to small bowl and rim and not in a flute! The diameter of this glass allows the aroma to be released, as the narrow body of a flute doesn't allow this to happen as effectively.

Forbidden Fruit from the Forbidden Desert

Early Black Friday Discounts

MAJOR SAVINGS ON HALF AND FULL CASES OF

NUEVO VERDE & 2019 WILD FERMENT PINOT NOIR 👇

TODAY NOVEMBER 24TH ONLY!

From Farm to Table, a Generational Family Business

Jornada del Muerto, or Journey of the Dead Man, is a dry desert basin in New Mexico where the Forbidden Desert Vineyard resides (one of the oldest vineyards in the state). Some of the best grapes in the world are harvested here, and we are proud to say the farm is owned and operated by Noisy Water Winery. The area remains uninhabited and undeveloped to this day, except for our patch of grape vines that produce unexpectedly abundant and healthy harvests even in the harsh heat and dryness. Winemaking is in our blood, as we are 5th generation farmers, so you can expect that each grape is nurtured and loved, especially by Uncle Richard, the Vineyard Manager who is pictured above. Our goal is for you to be able to taste the dedication in our wine!

Nuevo Verde & Wild Ferment Pinot Noir

These two wines come from grapes that are harvested at Engle Farms. In fact, our first harvest of grapes from this farm for the 2019 Wild Ferment Pinot Noir will be right in time for the holidays. The Nuevo Verde is a dry white that is crisp and refreshing and would be a great afternoon starter wine on any of the holidays. The 2019 Pinot Noir is bold and robust with notes of dark fruit. This would pair perfectly with a prime rib or grilled salmon.

2019 Nuevo Verde

What is Vinho Verde?

Vinho Verde refers to Portuguese wine that translates as "young wine". Typically released three to six months after the grapes are harvested, which can be red, white or rose. Nuevo Verde is our homage to the great Vinho Verdes of Portugal with our own NWW New Mexican twist.

Winemaker's Notes:

A meaningful first harvest for us after taking on a neglected vineyard, and breathing new life into dying vines. Citrus backbone, bright, fruity, and easily paired with or without dinner.

2019 Nuevo Verde
  Sale Price $24.00/bottle

2019 Old Vine Pinot Noir

Winemaker's Notes:

Remarkable old vine fruit, harvested by hand in our vineyard. Natural yeast of the area to start fermentation in a very atypical fashion. Allowing the indigenous strains of yeast to do the work, this wine was made the way wine was made in New Mexico nearly 400 years ago.

Taste:

This wine showcases beautiful New Mexican fruit and indigenous yeast

❤️ 4 Days of  Black Friday Discounts❤️

HUGE HALF AND FULL CASE DISCOUNTS OF

RESERVE CHARDONNAY & SKIN FERMENTED CHARDONNAY TODAY, NOVEMBER 23rd ONLY

THE MOST POPULAR WHITE WINE IN THE WORLD

Why do we love Chardonnay?

Chardonnay is so popular because it is so versatile! A huge variety of flavors and styles develop in the wines produced from this grape.

The Commonalities & Differences Between Our Reserve and Skin Fermented Chardonnays:

The Vintner's Reserve Chardonnay is aged in a new oak barrel and through this process, the oak imparts flavors into this wine like vanilla, caramel and butter. The Skin Fermented  Chardonnay, or Orange Chardonnay, is also made from chardonnay grapes, but unlike the reserve, the skins on these grapes are not removed during fermentation, which results in a delicate balance of plump apricot and heavy floral notes. This classic reserve and golden-hued beauty are definitely one for the books.

Get Down & Dirty!

❤️ Early Black Friday Daily Deals!❤️

TODAY NOVEMBER 22nd ONLY!

2017 Dirty Pinot Noir & 2018 Dirty

👇

What is a "dirty" wine?

"Dirty" wine means that it is minimally filtered and that Mother Nature did most of the work. That means there is minimal intervention that goes into producing them, and sometimes you will find a little bit of sediment at the bottom of your glass, which is perfectly okay! Wine that is less filtered is more natural, authentic and gets back to the roots of winemaking.

Why do we love Mother Nature's wine?

The most defining part of a wine that has minimal intervention is that they are more complex with many more layers and flavor surprises. They are diverse, surprising and merry to the max- the perfect wine for this holiday season.

2017 Dirty Pinot Noir

Inspiration:

Dirty Pinot Noir is more of an Old World style. “Old World” refers to those countries where wine first flourished, namely Western or Central European Countries and others around the Mediterranean basin and near the East.

Taste:

It's medium bodied, with a jammy fruit structure, smoky undertones and a tannic finish. It's unfiltered. Raw. Earthy. New. It's the guilty pleasure that changes your perspective on wine, and maybe even life.

2018 Dirty

Taste:

Hints of black currant and blackberry fill the air as you swirl your glass. Fig and an earthy note of smoke create a mesmerizing middle. Cedar and light tobacco meet on the tail end to finish off a magically dirty experience!

Blend:

20% Merlot, 15% Syrah, 15% Cabernet Sauvignon, 15% Petit Verdot, 15% Mourvedre, 10% Sangiovese, 10% Malbec
