At first glance, combining red wine and cola might sound absolutely bonkers, but don’t knock it until you try a Kalimotxo (sometimes written as it’s pronounced, Calimocho). This easy-drinking combination has a charming history and a flavor that is surprisingly delightful. 

The story of Kalimotxo dates back to the 1920s, in the Old Port area of Algorta, a coastal town in the Basque region of Spain. Legend has it that festival organizers, faced with several cases of wine that had gone bad, decided to add cola to make the wine drinkable. To their delight, the concoction was a huge hit, and Kalimotxo has been enjoyed around the world ever since.

• Dash of orange bitters
• Garnish with an orange slice or frozen cherries

Welcome back to another edition of Wine Geek Wednesday! We could all use a little break as we work to find the new normal here in Ruidoso with some fun wine facts. Today, we’re diving into the world of Aglianico, a gem of a grape that’s been captivating palates for centuries.
A Glimpse into History.

First off, let’s talk origins. The name "Aglianico" [ah-LYAH-nee-koh] is believed to stem from the Greek term "Vitis Hellanica," meaning "Greek grapevine".

Some research suggested that Greek settlers, way back around 800 BC, brought their precious vines to the sun-soaked lands of Southern Italy. Whether it’s truly native or a cherished import, Aglianico found its home in the regions of Campania and Basilicata.
The Mediterranean.

Volcanic soils and the warm Mediterranean climate imbue Aglianico with its distinct character. Think about these grapes basking in the golden sun, and soaking up the minerals from ancient volcanic deposits. This, dear reader, is terroir at its finest!

In Campania, Aglianico shines as the famous Taurasi, while in Basilicata, it dazzles as Aglianico del Vulture. These regions celebrate Aglianico with a fervor that’s palpable. And rightly so! These wines are often compared to Italy’s illustrious Barolos (made from Nebbiolo grapes), yet they come at a fraction of the price. Talk about a wine lover’s dream!

The Essence of Aglianico.

Aglianico is like a superstar of Italian wines. It’s a black grape that crafts wines with a remarkable structure and depth. Known for its full-bodied profile, Aglianico delivers a sensory journey that’s both robust and refined. 

Here’s what makes it stand out:

1. High Tannins & Acidity: These give Aglianico its powerful structure. Yes, it can be a bit harsh in its youth, but oh, the magic that happens with age!

2. Flavor Profile: Think black fruits, violets, herbs, leather, and smoky notes on the nose. On the palate, it’s a luxurious blend of plum, blackberries, coffee, chocolate. Yes, PLEASE!

Aglianico grapes are black and craft wines with remarkable structure and depth. 
Aging With Grace.

Patience is a virtue, especially with Aglianico. This wine is built to age, often needing 3 to 5 years to soften its tannic bite. But the reward that comes with wines that can evolve beautifully over a decade or more, is that they reveal layers of complexity and balance. 

However, while traditional Aglianico wines demand patience, modern winemaking techniques are making some versions more approachable upon release. So, whether you’re a seasoned collector or a curious newbie, there’s an Aglianico out there ready to delight your taste buds.

This month's newsletter gives you a sneak peek into what happens behind the scenes at Noisy, and is packed full of information about featured products, events and what's to come!

 

FARMING UPDATE:

Harvest 2021 will officially be wrapping up this month after endless hours of working through the night, fixing grape harvesting machines and securing the fruits of our labor (literally.) Harvesting takes place usually during the night because daytime temperatures change the sugar composition of grapes, so picking at night when sugar levels are stable keeps surprises from happening during fermentation. 

 

We have started producing wines made with this year's harvest, so keep your eye out for brand new wines and new vintages to be rolled out here in a few months! Our goal is for you to always taste the love and personal care in our wines-we truly are passionate about our mastery of grapes. Once harvest is over, we will continue the cycle of taking care of the vines through the next few seasons and getting them prepped for next year's fruit. One way we are already prepping the vines is by doing post-harvest foliar feeds. All this does is give the soil and the plants a solid nutrient foundation for next season and helps keep everything healthy for when the vines go dormant later this year. 

 

 

Calling The Clean Up Crew:

We don't get every single grape from harvests, but any accidental leftovers are feeding the wildlife and the soil. Soon the vineyards will be picked clean, leaving us a clean slate of plots to work with.

This wine showcases beautiful New Mexican fruit and indigenous yeast due to an atypical production process that lets the yeast do the work! This style of winemaking can be traced back to 400 years ago, making this bottle wise in its years. Notes of bright strawberry and blackberry are complimented with nuances of fig leaving you with a fruit forward satisfying finish.

FARMING UPDATE:

 

July is officially here, and we are loving the cool afternoon rainstorms to pair wine sipping on the porch with. The grapes are beginning to transform as their tiny flowers have been pollinated and have grown in to small, green clusters of hard berries into what we will soon recognize as grapes! New Mexicans get really excited about rain but so do the vines! The vineyards are soaking up the extra moisture and are enjoying a well deserved break from the hot sun. A healthy amount of shade, sun exposure, humidity and dryness are all essential components that determines the success of the crop yield. Grape growing is a tedious game of luck, risk and strategy, but New Mexico's weather pattern captures all those things-sometimes in one day!

Over the summer, we have taken on the project of opening up a brand new tasting room in Albuquerque, New Mexico! Noisy Water is moving into a space formerly occupied by the renowned Basket Shop of Old Town. To preserve the rich history and memories of the space, all original flooring, exposed brick and original signs will be preserved, creating an atmosphere that captures the essence of New Mexican culture and history while showcasing New Mexican wine. Our neighbors at Happy Hiker, Lapis Room, Flying Road Runner Bakery and Sheehan Winery are part of a revitalization effort to get Old Town back on its feet with new and improved opportunities for locals and tourists alike.

June is officially here and that means warm days, rainy afternoons, and cool evenings! Our Engle Vineyard is weathered and tough in its years, and it soaks up the warm sun gladly. Some even say that the dry desert climate is what makes our grapes so unique and authentic. As the grapes continue to grow, the team is working on improvements and experimentation in the farming side of things! We planted 3,000 new vines in Engle to introduce new varietals we can grow and hopefully enjoy in a few years! Some of these new vines were planted with different root stocks, to see if they are even more drought tolerant and cold resistant. 

 

Another project in the vineyard we are working on is inoculating the new vines with mycorrhizae, a fungus which grows in association with the roots of a plant in a symbiotic relationship, to help colonize good bacteria in the soil at the root zone. In other news, when the vines start to grow, the deer and antelope take that as a dinner invitation and munch on the leaves like its their own salad bar.

The risk of a late freeze is significantly lower now that we've reached the warmer month of May, but nothing is impossible, especially unexpected freezes in New Mexico! Happy April you wine lovers! This month is great for embracing environmentally friendly practices and sustainable farming, as our family comes from a long line of farmers that have always believed that if you love the land, it will love you back. Our love of the land influences everything we do and our environmental conservancy led us to embrace sustainable farming early on. Over the years, we've experimented with rootstocks, trellising systems, viticulture techniques and are constantly adapting to the harsh and unpredictable desert climate of our vineyards. All of these things put together set us up to make the best possible quality wine possible. April is the season of getting to witness the beginning of new life, as our vineyard emerges into bud break, marking the start of a bountiful growing season that largely depends on the methods and practices that we utilize.

An Emergence of Life 

It is official, bud break has arrived! The season of Spring is officially here and the weather is getting warmer every day, creating perfect conditions for little baby buds to begin the early stages of a grape's life. Life on a New Mexican vineyard in the middle of the desert can be tumultuous on the vines and NM is prone to drastic weather changes overnight, so we are always on alert for a late season freeze that could significantly alter the growing course of the grapes! As soon as bud break occurs, the need to protect the young shoots from the deadly frost becomes a critical focus.

 

Vineyard farming is a type of farming that utilizes an older, and even ancient way of growing

 

 These methods are also sustainable and eco-conscious! We get back to the roots of winemaking in our farming practices, as this is what influences the production of a high quality wine. Here is what we do to ensure this:

 

1. Build healthy soil: Making sure our soil is rich in microorganisms and organic matter that nourish the plant

2. Conserving water & biodiversity: We use drip irrigation to carefully control our water usage, and this encourages healthy flora that improves the habitat overall.

3. Controlling vineyard pests naturally: Thankfully Engle isn't prone to too many pests, but we do have an abundance of tarantula hawks that have to be controlled. We use owl and bird boxes to manage and you will never find any sprayed pesticides in the vineyard. Neem oil has also proven to be effective in keeping small insects away from our vines!

2019 Skin-Fermented Chardonnay

Also known as skin-contact chardonnay, skin-fermented chardonnay, amber chardonnay, or orange chardonnay - is a type of wine made from white wine grapes where the grape skins are not removed, as is typical in white wine production, but stay in contact with the juice for days or even months.

Happy March you wine lovers! The first month of Spring is here and the Earth is waking up from its long Winter nap. The month of March reminds us that new beginnings are in store, and soon we will witness the organic things around us bloom into life. This is also a great time of year to re-center and re-focus yourself while enjoying the warm sunshine. This month is all about fresh starts and new life, and we are right on time because the grapevines are about to bud after staying dormant all winter! 

 

This month's newsletter gives you a sneak peek into what happens behind the scenes at Noisy, and is packed full of information about featured products, events and what's to come! 

 

The Season Of Bud Break 

March is the month when we typically see the vines bloom into life! As the season of Spring creeps in, the weather gradually gets warmer and the Earth starts to thaw, creating perfect conditions for little baby buds to begin the early stages of a grape's life.

Preparing the vineyard for new life is like preparing your home to bring home a newborn baby! Throughout the Winter we have improved our irrigation systems, ran soil tests, tuned up our farming equipment, and are currently pruning the vines to welcome the new buds back home. Doing these things helps us have a fresh start for the growing season and also encourages the buds to grow big and strong for a healthy harvest later in the year.

Happy February you wine lovers! Did you know February comes from the Latin word februa, which means “to cleanse.” The month was named after the Roman Februalia, which was a month-long festival of starting fresh new beginnings that took place this time of year. We are right on time, because this month is all about getting in gear for a new growing season ahead! This month's newsletter gives you a sneak peek into what happens behind the scenes at Noisy, and is packed full of information about featured products and events this month! 

 

Our Tough, Acclimated Vines at Engle Farms

February is typically the snowiest month on average in the United States, and it turns out that snow is one of the secret ingredients that produces a bountiful harvest!

Vines are still dormant, but we are beginning to prepare the vineyard to replant new vines at Engle by improving irrigation systems, preparing to start pruning our vines within the next few months before bud break, and tuning up farming and harvesting equipment. One of the ways we are improving our irrigation system is by adding magnetics to our water drip lines that considerably promoted fruit growth last year. The magnets have increased water retention in the soil, reduced hard water clogs in drip heads and allowed the vines to absorb larger amounts of hard to use minerals in the soil!

  • We fell in love with holiday markets in Italy, where the streets are covered in string lights, holiday music is playing, local vendors are bundled up selling hand-crafted products, and holiday shoppers stroll through the rows of the market with a drink in hand. We were so inspired that we have recreated this magical experience right in our little village tucked away in the mountains of New Mexico.  The market is open to the public on Saturdays and Sundays at Enchanted Vine!
