Of all temptations, what could be more compelling than to skip dinner and go straight to dessert?

 

Sweet Temptation is Noisy Water Winery’s classic port-style wine. Created from a blend of Barbera and Dolcetto grapes with an infusion of brandy, this dark, rich dessert wine boasts of a fruitiness reminiscent of cherries and raisins on the nose and ends with a decadent vanilla finish and a hint of chocolate. 

Port-style wines are typically served with desserts because of their sweetness and higher alcohol content. However, Sweet Temptation makes an excellent wine to serve with a cheese course or appetizer as well; it's full-bodied, but not overpowering sweetness, makes it an excellent pairing for a Brie and walnut tart or a variety of rich, pungent cheeses and smoked, salted nuts. It also makes a wonderful “stand-alone” dessert course, with only fresh strawberries or raspberries and some dark chocolate, to finish up a sumptuous meal.

Montepulciano… few grape varietals evoke the romance of Italian wines, or inspire one to create a rich, poetic meal to share with friends and family. Well, feel free to tap your inner chef, we’ve got you covered on the wine!

 

Grown in southern New Mexico, Montepulciano is a harmonious balance of modern winemaking techniques with an overarching Old World theme. While many associate the name “Montepulciano” with a certain region in Italy and the wines that are produced there, Noisy Water has taken the namesake varietal and created a wine with a medium body (so as not to overwhelm the food with which it is served) and an explosive bouquet of sweet cherries, tobacco, and rich plum. Soft tannins and complex acidic notes make this wine as easy to drink on its own as with a meal.

Wine Of The Week - 2019 Double Barrel Reserve Chardonnay

 

Two years ago, Noisy Water Winery ventured into new territory… after nearly ten years of creating wines from grapes from other vineyards and growers, our winemaker acquired one of the largest vineyards in the state and started growing his own fruit. Despite the fact it was sadly neglected and in need of a lot of TLC, he took it, named it “Forbidden Desert Vineyard”, put it under the care of a master grower, and coaxed a harvest from 30-year-old vines. 

2019 Double Barrel Reserve Chardonnay, the fruit of that first harvest, was fermented in oak and aged in French oak barrels, giving it a definite oak profile that is characteristic of Chardonnays. A hint of fruit on the nose leads into a balanced, buttery finish of vanilla that calls to mind rich, baked Golden Delicious apples.

Today we are shining the spotlight on Tanis, a face you'll see regularly at the Noisy Water Winery tasting room in Ruidoso, NM and at Enchated Vine in Alto! 2016 Curtain Call is her favorite because this blend consists of all her favorite varietals (30% Malbec, 20% Cabernet Sauvignon, 20% Merlot, 10% Mourvedre, 10% Syrah, and 10% Petit Verdot).

 

Now that's what we call a show stopper!

 

Tanis loves to pair the 2016 Curtain Call with asiago cheese or a nice steak since it has similar and complimenting flavor profiles to red meats and nutty cheeses! Tanis enjoys the vanilla and blackberry notes of this dry red as well as the smooth and unique finish. She and her friends love sit back and hang out while they share a bottle.

 

Inspiration:

 

Making an international award-winning, show-closing blend where each varietal takes a bow: 30% Malbec, 20% Cabernet Sauvignon, 20% Merlot, 10% Mourvedre, 10% Syrah, and 10% Petit Verdot. 

 

Taste:

Vanilla and black cherry on the nose, working into hints of pitted fruit and blackberries. Finishes bone dry and silky-smooth. A full bodied Bordeaux-style red blend using the finest grapes in the state; a must-try for all wine connoisseurs.

Here's Why Wine & Cheese Taste So Good Together

Ever wonder why wine and cheese taste so good together? Why they are the perfect match made in heaven? Why they make each other taste better? Well, there is actually a science (and history) behind it! Records dating back hundreds of years show us that wine and cheese have been served together for generations. It is believed among wine historians that the concept of pairing wine and cheese originated in the early winemaking days of France. 

 

THE SCIENCE

 

Science tells us that pairing foods and beverages that taste similar to one another improves the experience and that the similarities compliment one another, but the opposite can also be true! The fat in cheese and the acidity in wine compliment each other because of that very fact- they are opposites! If you consume fatty or oily foods/beverages, it makes your mouth feel slick, or even slimy. If you consume astringent foods/beverages like green tea and dry wines, it makes your mouth feel rough and dry. But if you consume these different compounds together, it creates a balanced and pleasing. "mouthfeel," which refers to the way foods feel in the mouth. No wonder cheese and wine pair so perfectly!

Wine Of The Week - 2017 Sangiovese

A wine varietal closely identified with Italy has found a welcoming home in New Mexico’s vineyards.


Sangiovese is an Italian varietal that is typically medium-bodied and dry. Noisy Water has taken it in a lighter-bodied yet still Old World direction, with subtle nuances of oak and a finish of wild cherry. Earthy, with medium tannins and acidity, it’s a dry red wine that can carry the richness of burrata and other Italian cheeses yet complement hearty tomato-based dishes, whether served in a warm summer vineyard or on a chilly winter night.

The word “sangiovese” is believed to have come from “sanguis Jovis”, Latin for “blood of Jupiter”, the god of sky and thunder and the king of the gods in Roman mythology. The name was given to the wine by monks who lived near Monte Giove (Mount of Jupiter) in Emilia-Romagna region of Italy. It is the grape used primarily in blending Chianti but Noisy Water’s winemaker decided to let this varietal stand on its own.

How The Shape of the Glass Influences the Taste of Wine

 

It is True. The Taste of Wine Can Change in Different Glasses.

 

According to Riedel Crystal, the 260-year-old Austrian fine glassware company, a glass should be a "wine tool" designed to unlock a wine's full flavour potential, not just something to pour the wine into.

 

The Science Behind This Phenomenon 

 

The architecture of a wine glass consists of three components: The bowl. the stem and the base, all of which work together to deliver the "message" of your wine. The bowl of the glass is the key element that influences the flavor of your wine. Bowls of wine glasses can have different shapes, sizes and rim diameters; this is what can change the tasting elements of the wine, and this is how:

 

  • The diameter of the rim determines how much air can reach your wine, and how effectively your wine can "breathe."
  • Different sizes of glasses determines how much available space there is for your face to fit into when you tilt the glass to drink the wine. Your nose, in particular, is very important in the involvement of activating our senses.
  • The shape and size of the glass influences the direction that the wine hits your tongue and mouth, and which taste buds the wine hits first. Different tastebuds on your tongue taste different things!

Drinking red wine from a glass with a medium sized bowl is best, because this allows the wine to breathe as the exposure to oxygen allows bolder notes to come through. The wide rim also allows your nose to fit inside the glass, which is ideal for maximum immersion of the wine!
