How The Shape of the Glass Influences the Taste of Wine

 

It is True. The Taste of Wine Can Change in Different Glasses.

 

According to Riedel Crystal, the 260-year-old Austrian fine glassware company, a glass should be a "wine tool" designed to unlock a wine's full flavour potential, not just something to pour the wine into.

 

The Science Behind This Phenomenon 

 

The architecture of a wine glass consists of three components: The bowl. the stem and the base, all of which work together to deliver the "message" of your wine. The bowl of the glass is the key element that influences the flavor of your wine. Bowls of wine glasses can have different shapes, sizes and rim diameters; this is what can change the tasting elements of the wine, and this is how:

 

  • The diameter of the rim determines how much air can reach your wine, and how effectively your wine can "breathe."
  • Different sizes of glasses determines how much available space there is for your face to fit into when you tilt the glass to drink the wine. Your nose, in particular, is very important in the involvement of activating our senses.
  • The shape and size of the glass influences the direction that the wine hits your tongue and mouth, and which taste buds the wine hits first. Different tastebuds on your tongue taste different things!

RED WINE

Drinking red wine from a glass with a medium sized bowl is best, because this allows the wine to breathe as the exposure to oxygen allows bolder notes to come through. The wide rim also allows your nose to fit inside the glass, which is ideal for maximum immersion of the wine!

Classic Italian Reds: 2017 Sangiovese & 2018 Nebbiolo

 

Sangiovese is Italy's most planted grape and is the pride and joy of the Tuscan region. Sangiovese grapes take on new flavors and different stylists expressions based on where it grows. The high acidity in this wine makes it optimal for pairings with spice driven foods like tomato, red pepper pizza!

 

Nebbiolo grapes can date back as far as the 13th century and carries a big punch of tannins. This punchy red would pair nicely with foods that feature fat, butter or olive oil. Classic rustic Italian food is excellent with this wine of course, but so is hearty and savory Asian-inspired cuisine!

From Farm to Table, a Generational Family Business

 

Jornada del Muerto, or Journey of the Dead Man, is a dry desert basin in New Mexico where the Forbidden Desert Vineyard resides (one of the oldest vineyards in the state). Some of the best grapes in the world are harvested here, and we are proud to say the farm is owned and operated by Noisy Water Winery. The area remains uninhabited and undeveloped to this day, except for our patch of grape vines that produce unexpectedly abundant and healthy harvests even in the harsh heat and dryness. Winemaking is in our blood, as we are 5th generation farmers, so you can expect that each grape is nurtured and loved, especially by Uncle Richard, the Vineyard Manager who is pictured above. Our goal is for you to be able to taste the dedication in our wine!

 

 

Nuevo Verde & Wild Ferment Pinot Noir

 

These two wines come from grapes that are harvested at Engle Farms. In fact, our first harvest of grapes from this farm for the 2019 Wild Ferment Pinot Noir will be right in time for the holidays. The Nuevo Verde is a dry white that is crisp and refreshing and would be a great afternoon starter wine on any of the holidays. The 2019 Pinot Noir is bold and robust with notes of dark fruit. This would pair perfectly with a prime rib or grilled salmon.

What is Vinho Verde?

 

Vinho Verde refers to Portuguese wine that translates as "young wine". Typically released three to six months after the grapes are harvested, which can be red, white or rose. Nuevo Verde is our homage to the great Vinho Verdes of Portugal with our own NWW New Mexican twist.

Why do we love Chardonnay?

 

Chardonnay is so popular because it is so versatile! A huge variety of flavors and styles develop in the wines produced from this grape. 

 

The Commonalities & Differences Between Our Reserve and Skin Fermented Chardonnays:

 

The Vintner's Reserve Chardonnay is aged in a new oak barrel and through this process, the oak imparts flavors into this wine like vanilla, caramel and butter. The Skin Fermented  Chardonnay, or Orange Chardonnay, is also made from chardonnay grapes, but unlike the reserve, the skins on these grapes are not removed during fermentation, which results in a delicate balance of plump apricot and heavy floral notes. This classic reserve and golden-hued beauty are definitely one for the books.

What is a "dirty" wine?

"Dirty" wine means that it is minimally filtered and that Mother Nature did most of the work. That means there is minimal intervention that goes into producing them, and sometimes you will find a little bit of sediment at the bottom of your glass, which is perfectly okay! Wine that is less filtered is more natural, authentic and gets back to the roots of winemaking.

 

Why do we love Mother Nature's wine?

 

The most defining part of a wine that has minimal intervention is that they are more complex with many more layers and flavor surprises. They are diverse, surprising and merry to the max- the perfect wine for this holiday season.

 

2017 Dirty Pinot Noir

 

Inspiration:

 

Dirty Pinot Noir is more of an Old World style. “Old World” refers to those countries where wine first flourished, namely Western or Central European Countries and others around the Mediterranean basin and near the East.

 

Taste:

 

It's medium bodied, with a jammy fruit structure, smoky undertones and a tannic finish. It's unfiltered. Raw. Earthy. New. It's the guilty pleasure that changes your perspective on wine, and maybe even life.

Meet Lily, a face you'll see regularly at the Noisy Water Winery tasting room in Cloudcroft, NM! Lily's  favorite wine is the 2019 Gewürztraminer, not only because it's delicious but its origins and rich history. Alsace is a historical region in northeastern France and this wine has been produced in this region for hundreds of years! You can taste the love and dedication in it.

 

She also has a special place in her heart for this wine because it was the first wine she tasted in her introductory sommelier course to work for Noisy Water Winery.

 

Lily loves to pair the 2019 Gewürztraminer with the Spicy Tuna Udon Bowl from a local restaurant in Cloudcroft, New Mexico. Gewürztraminers are known for having subtly sweet and spicy notes and the best pairings happen with this wine when you step outside of traditional French cuisine and experience other foods of the world.

Wine Of The Week - 2018 Reserve Cabernet Sauvignon

 

We have taken to referring to our 2018 Reserve Cabernet Sauvignon as the “Michael Phelps” of our wine catalog. Looking at the bottle on our tasting room shelf is reminiscent of seeing Phelps standing on the pedestal with a stunning array of medals around his neck. You can’t even see our label! But what is the hoopla all about?

Well, let’s start with the fact that our Cabernet Sauvignon was awarded a 92 point rating (outstanding) on the prestigious James Suckling list, in addition to numerous awards from the New Mexico state fair competition, Fingerlakes International Wine Competition, and the San Francisco Chronicle wine competition. Then let’s see WHY it rates so highly among critics and wine lovers of all kinds.

 
2018 Reserve Cabernet Sauvignon

Produced from some of the greatest hidden gems in the New Mexico wine industry. These vines were planted in 1986 and have thrived in our unforgiving landscape ever since.

Taking 100% Old Vine Cabernet Sauvignon, mostly free run juice, and aging it in mixed French, Hungarian, and American oak for 18 months, our winemaker created a Cabernet with dark, rich colors, tannins that burst onto the palate, and a backbone of complex berries and plums. Bone dry and full-bodied, this wine is a perfect reflection of who we are as winemakers and showcases the best of what New Mexico has to offer.


Is this the culmination of over ten years of creating wines solely from New Mexico grapes in the little mountain resort area of Ruidoso? Not yet. There are still many grapes to harvest and wines to produce in years to come.
