∙ love gets better with age, and so does wine

Wine is more than just fermented grape juice as true love is more than just passion. An old bottle of wine feels priceless in your hands and radiates nostalgia, so for the sake of celebrating love (and patience) this month, we wanted to share what happens in a wine bottle over the years, what wines can stand the test of time and explain how wine, just like love, can get better with age.

What happens to wine when it's aged in a bottle?

Similarly to true love, select wine takes time to develop. Some wine tastes better with age because of a complex chemical reaction occurring among sugars, acids and substances known as phenolic compounds. In time, this chemical reaction can affect the taste, color and texture of wine.

We recommend aging our Petite Sirah, Merlot and Reserve Cabernet, as these wines will benefit and change from a few years of aging. We recommend not aging for more than 5 years, as the wine will be ready to be opened after that time period. Store horizontally in a cool and dark area for optimal aging!

Pro Tip: Purchase multiple bottles of the same wine and open one to taste immediately, age the others, then do an analysis on how the wine has aged in grace over time by opening another one every 6 months - 1 year!

Wine Of The Week - 2019 La Vida Dulce

What could be more evocative of “the sweet life” (“la vida dulce”) than a wine that is easy to sip on a cold winter day around a fire or a warm summer evening in the shade of a grape arbor? Add good friends and good food and you have the basis for the creation of one of Noisy Water’s most popular sweet red reserves, La Vida Dulce.

Late harvest wines are those made from grapes that are left on the vine past the peak of their ripeness, resulting in grapes that have a higher sugar concentration and, consequently, produce a sweeter wine. Late harvest Mourvedre is the grape used to create La Vida Dulce. Aging in oak creates sweet notes of vanilla, strawberry, and raspberry on the nose draw you into a luscious, jammy middle and culminate in a sweet but smooth, lighter-bodied finish.

"The Sweet Life" is everything the name claims.

A popular customer favorite for years, La Vida Dulce is back and better than ever. Enjoy it with a sweet treat on a cold day or use it as a perfect counterbalance to a rich, spicy meal any time of the year. Just remember…

Wine & Charcuterie

A Date Idea Just in Time For Valentine's Day

THE SCIENCE

Science tells us that pairing foods and beverages that taste similar to one another improves the experience and that the similarities compliment one another, but the opposite can also be true! The fat in cheese and the acidity in wine compliment each other because of that very fact- they are opposites! The different compounds of cheese and wine creates a balanced and pleasing "mouthfeel," which refers to the way foods feel in the mouth. No wonder cheese and wine pair so perfectly!

A Guide To Your Next Charcuterie Board

Olive oil and vinegar are excellent additions to charcuterie boards, as they can compliment many things on your board! They add that extra flair of flavor to crackers, bread or can be used as a dipping sauce in the center of our board.

Cheese is the ingredient in your charcuterie board that will complete it. Cheese adds different textures and colors to the board and can be paired with basically anything. Pro tip: Choose a variety of cheese that have different textures and tastes! For example, feta is soft and salty, as asiago is hard and slightly sweet.

Rustic red wines such as Cabernet Sauvignon, Malbec, Petite Sirah, and Zinfandel have bold tannins and a rustic taste pair with charcuterie with similar, smoky flavors

February Wine Of The Month

What better wine to celebrate a month dedicated to love and sweet things than a wine called “Love on Fire”?

Only in New Mexico does pairing red chile and chocolate make as much sense as pairing peanut butter and jelly or rum and coke. This is a combination well-suited to the making of candy, or hot chocolate, or maybe even a sauce for chicken.

And then along comes Noisy Water Winery and says, “Hey! How about making red chile and chocolate WINE???” With hints of berries and toasted marshmallow on the nose, and a rich velvety middle of milk chocolate, cinnamon, and vanilla, finishing with a spicy red chile kick (but not too spicy!), this wine is a perfect complement to an appetizer course loaded with fruits and cheeses or as a dessert with a rich cheesecake or anything sweet and creamy like tres leches cake. Or pair it with something dark and chocolatey, like brownies.

Amor En Fuego (Red Chile & Chocolate Wine)

Will have you reminiscing on times spent in grandma’s kitchen!!

$24.00

While it makes a delicious and intriguing dessert wine on its own, it can also be used to liven up hot chocolate or coffee. Or, freeze Amor En Fuego into cubes and use it to make a deliciously boozy iced coffee! Dress it up with a dash of cinnamon or red chile powder! You can also substitute it for any liquid in brownie or cake recipes to add a subtle, extra flavor dimension.

Whether served by itself or used to enhance a favorite stand-by recipe, you’ll be sure to add a little New Mexico flavor and mystique to your glass and table by including Noisy Water’s Amor En Fuego to your selection of great wines from the Land of Enchantment!

Add a little sweet sizzle to your Valentine’s Day celebration!

Wine Geek Wednesday

∙ pairing wine with your favorite desserts ∙

Dessert and wine pairings are ideal for events like Valentine's Day, anniversaries, birthdays or just for fun!

Wine that pairs best with desserts need an element of sweetness, but they also need to have the same intensity of the dish. When pairing wine with dessert, there are two factors to consider:

1: Acidity- an acidic wine will pair best with a fruity dessert that also is acidic.

2: Intensity- The more intense the dessert (like dark chocolate cake), the more intense your wine should be.

Pro Tip: A good rule of thumb is that as the color of dessert gets darker, so should the wine!

Lemon Bars Paired With Chardonnay

2019 Double Barrel Reserve Chardonnay

Why it works: The fruity citrus notes of the wine bring out even more of a zippy lemon flavor from the dessert, and the buttery oak is complimentary to the flaky crust.

$29.00

Chocolate Mouse Paired With Barrel Aged Sweet Red OR Amor En Fuego (Red Chile Chocolate Wine)

2019 Deviance

Why it works: The sweet strawberries and cherries of the wine balance with creamy heavy flavors of the chocolate as nuances of vanilla, tobacco, and smoke compliment baking spices like cinnamon and nutmeg.

$27.00

Amor En Fuego (Red Chile & Chocolate Wine)

Why it works: The marshmallow and vanilla notes of the wine compliment the rich flavors of chocolate as the red chile spice cuts right through the heavy creaminess of the mouse, which makes it feel perfectly balanced.

$24.00

Apple Pie Paired With Gewürztraminer

2019 Gewürztraminer

Why it works:  Gewürztraminer combines fruit and spice in the same way apple pie does. Notes of  peaches, lavender, and cinnamon of the wine compliments the ginger-y flaky crust and crisp apples of the pie.

February Newsletter

Happy February you wine lovers! Did you know February comes from the Latin word februa, which means “to cleanse.” The month was named after the Roman Februalia, which was a month-long festival of starting fresh new beginnings that took place this time of year. We are right on time, because this month is all about getting in gear for a new growing season ahead! This month's newsletter gives you a sneak peek into what happens behind the scenes at Noisy, and is packed full of information about featured products and events this month!

Our Tough, Acclimated Vines at Engle Farms

February is typically the snowiest month on average in the United States, and it turns out that snow is one of the secret ingredients that produces a bountiful harvest!

Vines are still dormant, but we are beginning to prepare the vineyard to replant new vines at Engle by improving irrigation systems, preparing to start pruning our vines within the next few months before bud break, and tuning up farming and harvesting equipment. One of the ways we are improving our irrigation system is by adding magnetics to our water drip lines that considerably promoted fruit growth last year. The magnets have increased water retention in the soil, reduced hard water clogs in drip heads and allowed the vines to absorb larger amounts of hard to use minerals in the soil!

What else is going on at Noisy?

  • Feel free to come see us or to call in an order for pick up! As of current, we are able to have wine tastings outdoors at 25% capacity!

  • We fell in love with holiday markets in Italy, where the streets are covered in string lights, holiday music is playing, local vendors are bundled up selling hand-crafted products, and holiday shoppers stroll through the rows of the market with a drink in hand. We were so inspired that we have recreated this magical experience right in our little village tucked away in the mountains of New Mexico.  The market is open to the public on Saturdays and Sundays at Enchanted Vine!

  • Enchanted Vine and our tasting rooms across New Mexico serve as cozy little getaways during the Winter, and especially during ski season! Gather around fire pits at the Enchanted Vine in Ruidoso and sip on some mulled wine or bundle up under the heated patio at our tasting rooms for a romantic Valentine's date!

Team Favorites

Featuring Jessica And Her Favorite Wine

Today we are shining the spotlight on Jessica, who works at our tasting room in Ruidoso, New Mexico. Jessica's favorite wine is our Bearly Legal, a semi-dry red wine that is so good it shouldn't be legal! The name of this wine immediately makes it likable, but the flavors of this wine is what sends it over the top! Jessica is mostly a dry red wine drinker, but when she craves something sweet, Bearly Legal hits the spot because its not overly sweet and is a perfect middle ground wine as a dry wine drinker.

PAIRING BEARLY LEGAL

Jessica enjoys drinking Bearly Legal with sharp cheeses like Asiago and a dill pickle spear! Now that's what we call a developed palate! Jessica says that this wine is delicious chilled or at room temperature and is best sipped on during movie nights or around a campfire.

Asiago Cheese

  $10.00

Bearly Legal

  $20.00

Inspiration

Hard to bear? We don’t think so. But one sip and you’ll understand what we went through to get this wine into your glass (legally).

Taste

Delectable fruit cocktail on the front, well-defined notes of wild cherry in the middle, and a smooth, creamy vanilla finish appreciable by even the most novice of wine drinkers.

Cheers!

Wine Of The Week - 2018 Petite Sirah

Wine Of The Week - 2018 Petite Sirah by Amy Bennett

Petite Sirah has a long, convoluted history. It was born in the 1870s, created by Dr. Francois Durif, a French nurseryman who wanted to create a grape that had the flavor of Syrah and the mildew-resistance of a varietal called Peloursin. He succeeded and named it “Durif”, but the grape never became a major French varietal. The grape migrated to the United States where it became a blending grape that did well in the California climate. The name “Durif” got lost along the way and someone decided that—due to the Syrah-like flavor and the small size of the grape—Petite Sirah was a good name for it.

But there is nothing small about the flavor of this particular wine!

Noisy Water Winery took Petite Sirah grapes, grown in the southern part of the state, and produced a wine with explosive dark fruit and snappy pepper on the nose; a rich, jammy blueberry middle; and a smooth vanilla finish from 15 months in French oak. The result is a full-bodied wine with strong tannins which pairs beautifully with steaks or any beef-centered meal. Try it with prime rib for a holiday dinner!

This ain’t our first rodeo with this particular varietal… Noisy Water made a Petite Sirah a few years back that was big, bold, and delicious and this one is even better!
