Our 2021 Rojo Caliente is an off-dry red blend infused with red chiles. The aroma is invigorating with notes of ancho chile, raisins, and dark chocolate. The taste is multi-dimensional, with a fruity pomegranate flavor, notes of roasted pecan and a hint of cinnamon. The finish is lingering and velvety with notes of dried peppers and fruit. This wine is medium-bodied with the perfect balance of tannin, acid, fruitiness and spice. We enjoy pairing Rojo Caliente with indulgent New Mexican dishes like cheesy red chile enchiladas, eloté (Mexican street corn), red chile corn bread with honey butter, and steak tacos.
