Don't Tell Mamma is a dry white wine crafted from New Mexico apples. The nose is reminiscent of a bushel-basket filled with freshly picked apples; aromas of Granny Smith apple, accented with hints of cinnamon and delicate apple blossom. On the palate, crisp, but not sweet, notes of pink lady apple and baked apple lead to a soft tart finish.
The inspiration behind Don’t Tell Mamma was Jasper's grandfather and family, who owned apple orchards in upstate New York, where the family fell in love with farming. The hope is to be able to help the farmers in the local area sell their fruit for a fair price and then turn the amazing local fruits into great cider and wine.
